Ghee is highly praised in Ayurveda and considered one of the greatest of foods. Ghee is pure butter oil with water, protein and lactose removed. Most oils can become oxidized and thereby damaged during cooking. This is not the case with ghee and this, along with its delicious flavour, is why it is considered an ideal cooking oil. Ghee balances all three doshas (controlling elements of the body). Ayurveda states that it strengthens the body, eyes and mind, improves memory and promotes longevity. If taken with meals in small amounts, ghee strengthens digestion. It also helps when applied to burns.
